North African Harissa Spice Blend Recipe
This North African Harissa Spice Blend Recipe is a chilli based paste used in tagines and stews, couscous dishes, hummus, pita bread and in peppers.
Harissa Spice Blend Recipe:
- 2 tsp cumin seeds
- 2 tsp coriander seeds
- 1+½ tsp caraway seeds
- 170 g medium-hot red chillies, deseeded and chopped
- 1 red pepper roasted and peeled
- 3 garlic cloves chopped
- 1 tsp sweet paprika
- 1 tsp tomato purée
- ½ tsp salt
- 3-4 tbsp olive oil
Dry roast the spice seeds in a hot pan until fragrant, leave it to cool then grind.
Blend together the chillies, pepper and garlic, add the ground spices, the tomato puree and the sweet paprika, blend again and slowly add olive oil just enough to make a smooth paste. Store in the fridge.
