Vegan Brownies Recipe gluten-free and easy to make

This is a Gluten-free and vegan brownies recipe using sunflower seeds, maple syrup and cocoa powder. I developed this recipe to satisfy my chocolate cravings in a healthier way. I don’t follow a vegan diet and still, this is now my favourite brownie recipe. I make it every weekend to send in the lunch box along with other healthy snacks I prepare like the granola and the date and nuts energy balls.

I have tried other vegan brownies recipes before when doing research and came across the new trend. Sweet potato brownies, zucchini brownies, black bean brownies. It all sounded very weird, but they all had the promise that you could not feel the difference. Decided to give a try to the sweet potato one, was easy to make, called only for natural sugars and promised a truly gooey and chocolaty indulgent treat. The result, however, was not as expected, it did work on the chocolate part but the texture was not right. It felt very heavy on the stomach, and there was not enough moisture.

The need for a healthier snack that satisfies chocolate cravings was real, and this new recipe would be just perfect. It’s very easy to make, almost all steps are done in a food processor. The only tricky part is to know when the brownies are ready, the 30 minutes baking time in my recipe are almost always just right. Because it all depends on the batter consistency and the oven temperatures, the trick is to check for a thin crusty layer on top and the brownies leaving the sides of the mould.

For this recipe and video (check below) I have used chocolate chips but for me, chocolate chunks work best as they give extra moisture, the chocolate bars tend to be of better quality and melt better than chocolate chips. Always use great quality chocolate and cocoa powder, it will make a big difference in the taste.

 150 g (5.29 oz) Sunflower seeds (not toasted)
 ½ cup (45 grams 1.5 oz) Cocoa powder + extra to dust
 1 Pinch of salt
 ½ tsp Vanilla extract
 150 g (5.29 oz) Maple syrup
  cup (80 mL) Water
  cup (53 grams 1.86 oz) Potato starch
 1 tsp Baking powder
 80 g (2.82 oz) Dairy free chocolate chips or chocolate chopped in small pieces
 Coconut oil to grease the mould

Preheat the oven to 180º/356F/Gas4.

Place the sunflower seeds in a food processor bowl and blend until you get a paste-like texture.

Add the cocoa powder, the salt and the vanilla extract, blend again for 1 more minute.

Add the maple syrup, and pulse for 1 minute, then add water and pulse again, stop when you get a very smooth paste.

Transfer to a bowl and sift over the potato flour and baking powder.

Add now the chocolate chips and mix.

Grease a small cake tin with coconut oil and dust with cocoa powder.

Pour the batter into the mould and bake for around 30 minutes. It should be cooked when there's a nice crusty layer on the top.

Let it cool down completely before slicing.
