Besan Cheela or Chilla | Vegan Chickpea Flour Omelette

Besan cheela or chilla recipe, the Indian savoury ‘pancake’ also known as veg omelette, usually served in a bread roll and drizzled with chutneys, this delicious and healthy dish made of besan or gram flour flavoured with spices and topped with onion, coriander and tomato can be served as breakfast or a snack at any time of the day.

Besan, gram flour or chickpea flour is always a favourite in this house, this gluten-free and protein-packed flour is an important plant-based source protein for vegetarians and vegans, also the base of many Indian snacks like this cheela but also dhokla and pakoras.

There are many variations to the cheela / chilla recipe, some with yoghurt or curd and it certainly makes the cheela softer more like an omelette but most of the times I make it without. Also, you may find variations around the vegetables used, and as mentioned in the cheela video below and written recipe you can use or experiment with other vegetables, the most popular being spinach, capsicum or pepper, carrot and cabbage.  This cheela recipe is originally from Rajasthan where recipes with besan are very popular, kadhi, gatte ki sabzi, besan stuffed bhindi are some of my favourites, other parts of India sometimes use semolina instead but I have not yet tried this variation.

I usually make this cheela recipe if I need a very quick and filling lunch fix, I serve it with hot ketchup I got from India and green chutney, most of the times I skip the bread to avoid mixing two types of carbs in one meal. I also cook the cheela in a reduced quantity of oil, the result may be less crispy but it is significantly healthier.

Yields2 Servings

 1 cup Chickpea flour
 1 tbsp Ginger-garlic paste
 1 Green chilli sliced
 ½ Small onion finely chopped
 ½ Tomato diced
 2 tbsp Fresh coriander chopped
 ½ tsp Salt
 ½ tsp Turmeric powder
 1 tsp Red chilli powder
 ¼ tsp Carom seeds
 1.50 cups Water
 Oil to shallow fry
 Other vegetables of your choice, optional
 Yoghurt, optional

Mix well the chickpea flour with the salt, carom seeds, turmeric and the red chilli powder.

Slowly add the water and yoghurt (if using) and stir the batter, make sure there are no lumps. The batter should be smooth and runny.

Now add the finely chopped onion, ginger garlic paste, green chilli, chopped coriander, tomato and any other chopped vegetables if using.

Heat up a pan and grease it with vegetable oil, drop enough batter to cover the bottom and cook until brown on both sides. Garnish with fresh coriander and serve with ketchup and green chutney.

 1 Green chilli
 ¼ Lemon juiced
 Salt to taste
 2 tbsp water

Blend all the ingredients together in a small chutney grinder just until you get a smooth paste, taste and adjust the season with salt and lemon juice.
