The Best Vegetarian Quesadillas Recipe with Guacamole, Nachos & Tomato Salsa

This is my absolute favourite vegetarian quesadillas recipe, ready in 15 minutes, it’s perfect to have on a movie night. The balance of this quesadilla recipe comes from using a mix of cheddar and mozzarella rather than just cheddar. Significantly reduces the fat content the result is a quesadilla that doesn’t drip in fat. I use fresh red chillies for a mild heat, and brine jalapenos for a different spiciness and for their vinegary taste. Never skip the coriander and spring onions they give nice freshness to the quesadilla flavour. I use red romano peppers, always have at home because it’s my favourite to use pizza, quesadillas or to stuff with feta and quinoa. The black beans pair very well with all of the other flavours and plus are a source of protein.

I serve these vegetarian quesadillas with fresh tomato salsa, and a side of guacamole with nachos or just plain tortilla chips. There accompaniments are also quick and easy to make, check the recipes below.

Tomato Salsa, Guacamole & Nachos

 

Tomato Salsa and vegetarian quesadillas recipe
To make the tomato salsa simply chop finely fresh ripe tomatoes, sprinkle some salt and place over a sieve. The tomatoes will release the excess of water. Then you just need to mix with minced garlic, finely chopped red onion, green chilli, lime juice and freshly chopped coriander. I keep it very simple with ingredients that I always have around and it works for me.
Nachos and vegetarian quesadillas recipe
For the cheesy make nachos lay a few tortilla chips on a baking tray, sprinkle with cheese, green chilli, jalapenos. I might add sliced olives, capers and red onions to them then just bake until the cheese is golden.
Guacamole and vegetarian quesadillas recipe
To make the guacamole I roughly chop the garlic cloves with rock salt. Then mash in a bowl with finely chopped red onions and sliced green chilli into a paste.  Mix and mash half of the avocado season with lime juice, add the other avocado in chunks and garnish with freshly chopped coriander.

 4 Tortilla Wraps
 1 cup Mixed Grated Cheddar & Mozzarella
 1 Red Chilli Sliced
 ½ Romano Red Pepper sliced
 2 tbsp Chopped Coriander
 1 Spring Onion Sliced
 1 tbsp Jalapenos in brine
 50 g Boiled Black Beans
 Oil to cook

Lightly grease a pan with olive oil, warm up then place 1 tortilla, immediately spread the filling on it, then cover with another tortilla.

Cook until it golden and crispy on one side then flip and cook the other side until golden, you can drizzle very little oil around the edges, to grease and make it crispy. Putting too much oil will rather make it soggy adjust the flame if required.
