Garlic Kale Pasta with Chilli Flakes

This garlic kale pasta with chilli flakes must be one of the quickest dishes I pull on my morning for his lunchbox. Can get it ready in literally 20 minutes, and it’s just so good. Kale is packed with Vitamin K, and it pairs so well with garlic and chilli flakes. This pasta has so much flavour you will not need any sauce, the olive oil from tossing the kale is enough to coat the pasta in a garlicky gloss that glues the parmesan style cheese to it. I find that spaghetti works best for this dish but feel free to experiment with some other shape of pasta.
Heat up a saucepan with 2 Litters of water, when it comes to a boil drop the pasta in, make sure to stir in the first 2 minutes, cook until al dente, then drain.
In the meantime in a bowl put the washed and chopped kale, or the whole kalettes and top with boiling water then cover using cling film and leave for 5 minutes, then drain.
Heat up a pan with the extra virgin olive oil add the minced garlic when garlic starts to get golden add immediately the kale or kalettes saute for 3 minutes.
Add the pasta and chilli flakes and toss.
Garnish with grated cheese and serve.
