North African Chermoula Spice Blend Recipe
Chermoula Spice Blend recipe is a North African originated zesty paste and it can be used in meaty vegetables like okra, squash, aubergine and cauliflower, it is also used in rice dishes and couscous.
Chermoula Spice Blend Recipe:
Ingredients
- 2 tsp cumin seeds
- 1 large bunch of coriander (leaves and stalks)
- 3 garlic cloves minced
- 1 tbsp sweet paprika
- 1 Pinch saffron strands
- Juice of ½ lemon
- Olive oil
- Salt to taste
Method
Dry roast the cumin seeds in a pan until fragrant, grind together with the coriander, garlic, paprika, saffron and lemon juice while grinding keep adding olive oil until you get a thick paste. Season and store in the fridge.
