Not a fan of the ritual the city goes through every lunch break. Decide where to get lunch from, stand in the queue, get the same boring sandwich/salad everyday. A katsu curry that smells good but it gets too much after the first 3 bites. There are also places with a more natural, fresh, healthy moto. But then you are stuck with the 3 vegetarian options available on the menu until they decide to change it. Here you will find a list of lunch box ideas to get you to a fuss-free lunch break.
The secret to an efficient home cooking and making a daily lunch box is to be organized. I will not suggest you do meal prep on the weekend for the whole week, Fresh is absolutely best and in this case also safer.
You only need to spend half hour to make your lunch box and once you get more comfortable and experienced you can do it multitasking. Thinking ahead what you will make in the morning or in the evening if you prefer is a jump start to make things work. If taking extra from dinner, add a salad or change the garnish, mix things up, keep it interesting. Quick, Simple and Delicious Lunch Box Ideas
Chickpea, Avocado & Cranberries Quinoa salad
This quinoa salad is quick, easy and delicious. While you cook the quinoa, prep the vegetables, first chop red onion very very finely add it to a bowl and season with olive oil and lemon juice, then just keep adding the rest as you prep, cucumber, chickpeas, tomato, cucumber, shredded lettuce, cranberries, herbs in the proportion 2 Coriander, 1 Parsley, 1/2 Mint and 1/4 Basil, avocado pieces. When the quinoa is cooked wait for it to cool down a bit then just mix all together, season with salt adjust the olive oil and lemon juice if required, add a touch of lemon zest.

Asparagus Lemony Pasta
It doesn’t get much simpler than this, fresh and tasty a super quick lunch box idea. Cook the pasta in boiling water until al dente, in the meantime toss the asparagus in a pan with garlic and olive oil, season, mash part of the asparagus (keep the spears whole), toss the pasta in this mix and zest some lemon on top and drizzle a bit of olive oil. Resist the temptation of adding grated cheese, this pasta is great as it is, nice, simple and fresh.
Simple Chestnut Mushroom Pasta
I love mushrooms and because I follow a vegetarian diet I tend to use them a lot for their nutritional value. For this lunch box ideas recipe, I added parsley not only a great pairing with the mushrooms but also a source of iron. While the water comes to a boil, slice the mushrooms, smash a garlic clove (keep the skin – it will give flavour without burning) and chop the parsley. While the pasta cooks, golden the garlic on a pan with olive oil. Saute the mushrooms, season with salt and black pepper. Toss with the cooked pasta, garnish with the parsley and a drizzle of olive oil.
Aubergine & Tomato Stew with Basmati Rice
If you have spare prepared vegetables make a quick tomato stew, always great with a side of steamed basmati rice. Sweat onions, garlic and ginger, saute the vegetables (in this case aubergine). Then add turmeric and red chilli powder if using. Add ripe chopped tomatoes or canned ones, cook and season with salt, ground cumin and coriander.
Gnocchi, Capers and Olives in Tomato Sauce
Another of my favourite lunch box ideas, gnocchi that cook in like 3 minutes in boiling water, then toss in a 10 minute tomato sauce (recipe here Step 2 on this pasta recipe), top with black olives, capers, chilli. If you have spare grilled vegetables throw them in, they pair very well with. Add some mozzarella pieces or grated hard cheese or both! 😉
